Description
These Peaches and Cream Crumble Bars are a buttery, creamy dream made with fresh or canned peaches layered over a sweet oat crust and rich cream cheese filling. A perfect summer dessert that’s easy to make and even easier to love.

For the Crust & Topping:
- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
For the Cream Layer:
- 8 oz cream cheese, softened
- 1/3 cup sour cream
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
For the Fruit Layer:
- 2 cups fresh peaches, peeled and thinly sliced (or canned, well-drained)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, cinnamon, salt, and vanilla. Add melted butter and stir until crumbly.
- Press two-thirds of the mixture into the pan to form the crust.
- In another bowl, beat cream cheese, sour cream, sugar, egg, and vanilla until smooth.
- Spread the cream mixture evenly over the crust.
- Arrange sliced peaches evenly over the cream layer.
- Sprinkle remaining oat crumble mixture over the top.
- Bake for 35–40 minutes, until top is golden and center is just set.
- Cool completely, then refrigerate at least 2 hours before slicing.
- Cut into squares and serve chilled.
Notes
- For a gluten-free version, use certified GF oats and a 1:1 GF flour blend.
- Greek yogurt can replace sour cream for a lighter option.
- Add a few raspberries or white chocolate chips for a twist.
