These Baked Pumpkin Donuts are soft, moist, and packed with warm fall spices. Easy to make and healthier than fried, they’re the perfect treat for autumn mornings.

- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan.
- In a bowl, whisk together pumpkin puree, eggs, sugars, oil, and vanilla extract.
- In another bowl, mix flour, baking powder, baking soda, spices, and salt.
- Combine wet and dry ingredients. Mix until just combined.
- Pipe or spoon the batter into the donut pan.
- Bake for 12–15 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes in the pan, then transfer to a wire rack.
- Optional: Coat with cinnamon sugar or glaze once cooled.
Notes
- Use 100% pumpkin puree, not pumpkin pie filling.
- Add chocolate chips or chopped nuts for variation.
- Freeze for up to 3 months in airtight container.
